Pumpkin Pie, Pumpkin Bread and Pumpkin Spice Latte Recipes!


I don't know about you but I'm so excited for all the fall and pumpkin things! To celebrate Starbucks coming out with PSL's this month, here are some delicious pumpkin recipes to get a jump start on preparing for the season.


Pumpkin Pie


Ingredients:

  • 1 pie crust (buy pre-made or make your own)

  • 3/4 cup granulated sugar

  • 1/2 tsp salt

  • 2 tsp cinnamon

  • 1 tsp ground ginger

  • 1/2 tsp ground cloves

  • 2 large eggs

  • 1 can (15 oz) pumpkin puree

  • 1 can (12 oz) evaporated milk

  • Optional- whip cream

Directions:

  1. In a mixing bowl, combine the sugar, salt, cinnamon, ginger, and cloves. Add in the eggs and whisk until blended.

  2. Add pumpkin and evaporated milk until combined. Pour into pie crust.

  3. Bake in a 425 degree oven for 15 minutes. Cover the pie crust edges with foil and lower temperature to 350 degrees. Bake for an additional 40-45 minutes, until a toothpick inserted comes out clean.

  4. Remove from oven and cool. Optional, you can add whip cream to decorate. Refrigerate until ready to serve.



Pumpkin Bread


Ingredients:

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar (dark or light)

  • 1 cup + 1 1/2 Tbsp all-purpose flour

  • 3/4 tsp baking soda

  • 1/2 tsp baking powder

  • 1/2 teaspoon salt

  • 1/2 tsp cinnamon

  • 1/2 tsp pumpkin spice

  • 1 large egg or 2 small ones

  • 3/4 cup pumpkin puree

  • 1/3 cup oil

  • 1/3 cup water


Directions:

  1. In a large bowl, combine both sugars, flour, baking soda, baking powder, salt and spices.

  2. In another bowl, combine egg, pumpkin puree, oil and water. Add wet ingredients to dry ingredients. Mix until combined.

  3. Grease one 9x5 loaf pan (or 6 cup capacity) and pour the batter into it. (Optional- Williams Sonoma one pictured here: https://www.williams-sonoma.com/products/nordic-ware-sunflower-harvest-loaf-pan/?pkey=s%7Cpumpkin%20bread%20pan%7C13 ).

  4. Bake at 350 F for 45-60 minutes, or until a toothpick inserted in the middle comes out clean. Let bread cool completely before removing from tin or serving.




Pumpkin Spice Latte


Ingredients:

  • ¼ teaspoon pumpkin pie spice

  • ½ cup of milk

  • 1 tablespoon canned pumpkin puree

  • 1 cup of coffee

  • 1 teaspoon vanilla extract

  • 1 teaspoon of sugar

  • 2 tablesoon half and half cream

  • Optional- whipped cream

Directions:

  1. In a tall, microwave safe mug whisk together the milk, pumpkin puree, spice, and vanilla.

  2. Microwave the mixture for about 1 to 2 minutes until frothy. Be careful it doesn’t boil over. 

  3. Add coffee, sugar and cream and stir until blended. 

  4. Optional- add a dollop of whipped cream on top and finish it off with a light dusting of nutmeg.

P.S. You can substitute ingredients for gluten or dairy free versions and use a flax egg. Try these delicious recipes out and let me know how they turned out!
